Why haven’t I tried home – made coconut milk!! It’s so easy, and this recipe uses shredded unsweetened organic coconut rather than the hassle of cracking open a coconut and all the mess involved. The result of this coconut milk is incredibly smooth, rich, buttery and comes together in just a few minutes! No cheesecloth required just a simple strainer works like a gem. Save the pulp and add it to your smoothie or breakfast cereal as I did in the oatmeal below. This may become your fast go to milk!
Note: The coconut milk separates as it sits in the fridge, the fat will rise to the top, which is quite normal. Just give it a good stir before serving. Use a powerful blender – I used my Vitamix
- 1 cup unsweetened organic shredded coconut – I purchased in bulk
- 2 cups water
- Teeny pinch sea salt
- Add all ingredients to powerful blender and let sit 5 minutes to soften. Blend on medium speed for a few seconds then on high for about a minute or two. Strain through a nut milk bag or sieve and transfer to a glass jar, save the pulp for other uses.
